Recipe: Pecan Surprise Pie

Hi,

Not sure if either one of these is anything like the pie at Furr's, but they sure do seem different.

Pecan Surprise Pie

1 c. sugar
4 eggs
2 c. milk
1/2 c. melted margarine
1/2 c. plain flour
1 tsp. vanilla
1 c. chopped pecans

Place all ingredients in blender and blend until thoroughly mixed. Pour mixture into buttered 10-inch pie pan.
Bake 1 hour at 300 degrees or until set.

Pecan Surprise Pie

1 tsp. vanilla
1 c. pecans
22 crushed Ritz crackers
3 egg whites
1 c. sugar

Beat egg whites until stiff, add sugar and stir. Fold in crumbs, vanilla and pecans that have been mixed together. Put into greased and floured pie tin and bake at 350 degrees to 375 degrees for 25 to 30 minutes
