I recently saw a recipe for a cheese cake using shortbread cookies as the crust. The amount given was 10 ounces shortbread cookies made into crumbs and 5 tablespoons butter. I don't know how many cups of crumbs that would make, but I would think that the shortbread cookies would take less butter than graham crackers, and of course, no sugar. It was baked at 325 degrees for 8 minutes in an 8 or 9 inch springform pan. Not homemade, but a lot easier, if you are low on time. It would make a delicious crust, I think.
