Recipe: Sweet and Sour Cabbage (using red cabbage and apple, crock pot)

SWEET AND SOUR CABBAGE

"Dried fruits such as chopped apricots, raisins or dried cranberries may be added to mixture if desired. Flavor improves with reheating the following day. Serve as a side dish with meat chops or poultry."

1 medium head red cabbage, thinly sliced
1 medium onion, thinly sliced
1 large apple, peeled
1/2 cup water
1/4 cup brown sugar
1/4 cup red wine vinegar
2 tablespoons flour
1 teaspoon salt
1 dash ground black pepper

Combine all ingredients in crock pot.

Cover crock pot and cook on LOW for 6 to 8 hours or until cabbage is tender. Stir halfway through cooking time.

When done, correct flavoring, if needed, by adding more sweetness with some sugar or honey or more tartness with a bit more vinegar or even some lemon juice.

Makes 8 servings
