SWEET AND SOUR PORK
1 pork tenderloin (about 6 ounces) cut into 3/4-inch pieces
2 teaspoons vegetable oil
1 (8 1/4 ounce) can pineapple chunks, drained (reserve 1/2 cup syrup)
1/4 cup sugar
1/4 cup catsup
1/2 teaspoon soy sauce
4 drops red pepper sauce
Rice (recipe follows)
2 teaspoons cornstarch
2 tablespoons water
1/2 medium green bell pepper, cut into 1/4-inch strips
6 cherry tomatoes
Cook and stir meat in oil in 10-inch skillet over medium heat until brown, about 10 minutes.
Add enough water to reserved pineapple syrup to measure 2/3 cup. Stir syrup mixture, sugar, catsup, soy sauce and pepper sauce into skillet. Heat to boiling. Reduce heat; cover and simmer until meat is done, 8 to 10 minutes.
Prepare Rice.
Mix cornstarch and water; stir into meat mixture. Cook, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute.
Stir in pineapple chunks, green pepper and tomatoes; heat until pineapple and tomatoes are hot.
Serve over Rice.
RICE
2/3 cup water
1 teaspoon margarine or butter
1/4 teaspoon salt
2/3 cup uncooked instant rice (Minute rice)
Heat water, margarine and salt to boiling in 1-quart saucepan. Stir in rice. Cover; remove from heat. Let stand until rice is tender, about 5 minutes. Stir rice with fork until fluffy.
Makes 2 servings
