Recipe: Sweet and Sour Tuna (StarKist Tuna, 1990) (microwave)

SWEET AND SOUR TUNA

1 1/2 cups red and green bell pepper chunks
2 green onions, cut into 2-inch pieces
2 teaspoons grated gingerroot
1 clove garlic, minced
1 (12 1/2 ounce) can (or two 6 ounce cans) StarKist Tuna, drained and broken into chunks
1 (11 ounce) can mandarin oranges, drained
1 (8 1/4 ounce) can pineapple chunks in juice, drained; reserve juice
FOR THE SWEET AND SOUR SAUCE:
1 cup orange juice
2 tablespoons cornstarch
3 tablespoons catsup
2 tablespoons wine vinegar
1 tablespoon soy sauce
1 tablespoon brown sugar
Hot cooked saffron-flavored rice (for serving)

In a 2-quart microwavable casserole combine bell pepper, onions, ginger and garlic. Cover loosely; micro-cook on High power for 2 1/2 to 4 minutes, or until vegetables are tender; stir once.

Stir in tuna, oranges and pineapple. Set aside.

In a microwavable bowl combine orange juice, pineapple juice and cornstarch. Stir in catsup, vinegar, soy sauce and brown sugar. Cover loosely; micro-cook on High power for 4 to 6 minutes, or until sauce thickens and bubbles; stir twice.

Stir sauce into tuna mixture. Cover loosely; micro-cook on High power for 2 to 3 minutes, or until heated; stir once.

Serve over hot cooked rice.

Makes 4 servings
