Recipe: Poppy Seed Dressing (using honey and Dijon mustard)

Salads - Salad Dressings
POPPY SEED DRESSING

1/2 cup salad oil (or 1/4 cup each salad oil and olive oil)
1/4 cup rice vinegar
1 1/2 tablespoons Dijon Mustard
1 1/2 tablespoons lemon juice
1 1/2 tablespoons honey
2 teaspoons poppy seeds
1/4 teaspoon each salt and pepper

In a bowl with an electric mini-mixer or in a blender, mix all ingredients together.

Makes about 1 cup
