Sweet Spinach Salad

1 bunch spinach, washed and torn
1/2 red or sweet onion, thinly sliced
5 mushrooms, sliced
3 T. vegetable oil
2 T. cider vinegar
2 t. brown sugar

Place the spinach, onion and mushrooms in a bowl. Whisk together the oil, vinegar and sugar til the sugar is melted, pour over the salad, mix and serve.

Sweet and Sour Spinach Salad
Classic spinach salad gets a face lift with sweet-and-sour sauce as the key ingredient. Oranges, strawberries, mushrooms and bacon all get into the act.

2 pounds (6 cups) spinach, rinsed, stemmed and chopped
8 ounces bacon, cooked and crumbled
1/2 pound (1 1/2 cup) mushrooms, trimmed and sliced
2 cups sliced hulled strawberries
4 hard-cooked eggs, peeled and sliced
1 onion, peeled and thinly sliced
1 cup bottled sweet-and-sour sauce
1/2 can (11 oz.) Mandarin orange sections, drained

Combine spinach, bacon, mushrooms, strawberries, eggs, onion, sweet-and-sour sauce and mandarin oranges in a large salad bowl; toss lightly. Serve immediately.
