Recipe(tried): Taco Soup, HM Pimento Cheese, Vanilla Fruit Salad, Spiced Peach Cobbler
MenusTACO SOUP
1 lb ground venison, beef, ot turkey (I used venison)
1 sm onion, diced
1 bell pepper, diced
1 pkg dry ranch dressing
2 pkg regular taco seasoning
1 can each whole kernel cprn, black beans, light red kidney beans, undrained
2 cans diced tomatoes
In a large soup pot brown ground meat, onion, and bell pepper. Mix in dry seasonings. Add canned veggies, and enough water to your taste. Simmer for 30 minutes.
HOMEADE PIMENTO CHEESE
1 pound velveeta, shredded
1 8 oz block mild cheddar, shredded
salt and pepper to taste
1 lg plus 1 sm, can diced pimento, undrained
Mayo to taste
Mix all together and serve. *Hint: partially freeze velveeta to make it easier to shred.
VANILLA FRUIT SALAD
2 cups buttermilk
1 pkg (sm) vanilla pudding, instant type
1 can each: pineapple tidbits, mandarin oranges, fruit cocktail, well drained
1 small container cool whip
Mix vanilla pudding and buttermilk, mixture will be lumpy. Add fruit and stir, then add cool whip, folding it in. Serve or refidgerate. Will keep for 4-5 days.
UNCLE BUCK'S SPICED FRUIT COBBLER
1 1/2 cup Uncle Buck's cobbler mix
2/3 cup milk
1/4 stick (1/8 cup) butter
1 pint spiced peaches
Melt butter in cobbler dish. Mix together milk and Uncle Bucks cobbler mix. Pour over melted butter. Pour undrained peaches over top and bake at 350 for 35 minutes.
*I noticed someone (manyhats) (jackie/MA) just posted a wonderful recipe for spiced peaches, so I will refer you to that one instead of adding mine here!
