Recipe: Ten Layer Chocolate Cake
Misc.Ten Layer Chocolate Cake
2 cups Sugar
1 3/4 sticks margarine
3 cups self rising flour
1 cup milk
4 eggs
2 tsp. vanilla
Mix. Bake at 350 degrees for 20-25 minutes in 3 eight inch pans. When the layers cool, cut each layer into half lengthwise.
Chocolate Sauce Icing:
2 cups sugar
1 stick margarine
3/4 of large can of evaporated milk
6 Tbsp. cocoa
2 tsp. vanilla
Mix sugar and cocoa. Add milk and vanilla. Add margarine. Boil 10 minutes. Cool icing completely and beat with spoon.
This sauce is also good on ice cream or pound cake.
I alternate between these two frosting below. I like them because I love an icing that is more like old fashion hard fudge. Which of these two I use, will most often depend on whether I have squares of chocolate in the pantry, or if I only have cocoa. Also the second recipe is sweeter but both are a boiled frosting that set up hard the way I like it:
Old Fashioned Hard Fudge Frosting:
1 cup sugar
1/2 cup milk
1 tsp. butter
1 tsp. vanilla
2 squares unsweetened chocolate
Add sugar and milk, butter. Stir until boils HARD! Boil HARD 6 minutes. Don't stir while boiling. Remove from heat. Add vanilla and chocolate. Stir until chocolate melted. Pour over cake. Will be a hard, shiny frosting. Tastes like fudge. Frosting sets up very quickly.
Old Fashioned Fudge Frosting:
2/3 cup Hershey's cocoa
3 cups sugar
1 1/2 cups milk
1/4 cup butter
1 tsp. vanilla
Thoroughly combine dry ingredients in heavy 4 quart saucepan. Stir in milk. Boil without stirring to soft boil stage. Add butter. Remove from heat. Beat until it has cool some; add vanilla. Frosting will set up hard.
