Recipe: Upside-Down Pear Ginger Cake (using Gingerbread Mix)

UPSIDE-DOWN PEAR GINGER CAKE

1/4 cup butter
3/4 cup brown sugar, packed
1 can (15 ounces) pear haves or 2 ripe pears, peeled and cored
1 box (14.5 ounces) gingerbread mix (plus ingredients to prepare mix)
TO SERVE:
Whipped cream to garnish, if desired

Preheat oven to 350 degrees F.

Melt butter in a deep-dish glass or ceramic pie pan in microwave.

Sprinkle brown sugar on melted butter. Slice the pears and arrange them decoratively on brown sugar mixture.

Prepare the gingerbread mix according to package directions. Pour over peans in pan.

Bake 50 to 60 minutes. When done, cool for 10 minutes and turn over onto a serving plate.

Serve with the whipped cream garnish.
