THREE-GRAIN OVEN PILAF
"Brown rice and barley take a long time to cook and don't usually fit into busy schedules. With this quick-to-assemble dish, these whole grains cook without tending, right alongside the entree."
2 cups chicken broth
1/2 cup water
1 tablespoon butter or margarine (optional)
1/4 cup sliced green onion
1 garlic clove, minced
1/4 cup bulgur wheat
1/4 cup uncooked brown rice or long grain white rice
1/4 cup uncooked pearl barley
3 dashes hot pepper sauce
2 tablespoons minced fresh parsley
Preheat oven to 375 degrees F.
In saucepan or microwave oven, bring broth, 1/2 cup water and butter to boil.
Meanwhile, in 1-quart casserole, add onion, garlic, bulgur wheat, rice and barley. Pour broth mixture over grains.
Cover tightly and bake in preheated 375 degree F oven 40 minutes or until barley and rice are tender and most of liquid is absorbed.
Stir in pepper sauce and parsley; cover and allow to stand 5 minutes to thicken before serving.
Makes 4 servings, 1/2 cup each
