BROCCOLI CHEESE GRITS
1/4 cup finely chopped onion
1 tablespoon margarine or butter
2 cups water
2/3 cup Quaker or Aunt Jemima Enriched Hominy Quick Grits, uncooked*
1/2 teaspoon salt (optional)
3 cups chopped broccoli, cooked and drained or one 10-oz. pkg. frozen chopped broccoli, cooked and drained
1 cup (4 oz.) shredded Cheddar cheese
Saute onion in margarine until tender.
Add water; bring to a boil. Slowly stir in grits and salt. Reduce heat; simmer 2 to 4 minutes or until thickened, stirring frequently.
Add broccoli; heat through. Remove from heat; stir in cheese.
*NOTE: To substitute regular Quaker or Aunt Jemima Enriched Hominy Grits, increase water to 2 1/2 cups and simmer time to 12 to 14 minutes.
TIP: To keep grits warm for serving, transfer to 1-qt. oven-proof serving dish; place in 200 degree F oven.
