You can't get something that tastes like coconut from zucchini, but you can get the same texture. For example, you could make a carrot cake by shredding the zucchini to the texture of shredded coconut. Make a cake, brush with glaze and sprinkle baked zucchini on it, but that is only for looks cause the sweetness of the cake drowns out the zucchini.
