Recipe(tried): Tonite it's Mexican Stuffed Shells,

Menus

tossed salad, crusty garlic bread, and Phish food ice cream for dessert. I posted the recipe for the shells below, hope y'all like them as much as we do!

Mexican Stuffed Shells

12 pasta stuffing shells, cooked and drained
1 lb ground beef (or ground turkey)
1 jar (12 oz) medium or mild salsa
1/2 cup water
1 8-oz can tomato sauce
1 4-oz can chopped green chilies, drained
1 cup (4 oz) shredded monterey jack cheese
1 2.8-oz can durkee french fried onions

Brown ground meat; drain. Combine salsa, water and tomato sauce; stir 1/2 cup into ground meat along with chilies, 1/2 cup cheese & 1/2 can fried onions; mix well. Pour half of remaining sauce mixture in bottom of a 10-inch round or 8x12 baking dish. Stuff cooked shells with meat mixture. Arrange shells in baking dish; pour remaining sauce over shells. Bake, covered, at 350 degrees for 30 minutes. Top with remaining cheese and onions; bake, uncovered, 5 minutes longer.

Note: I have never added the chilies as I never seem to have them on hand when I make this but have loved the taste without them.
