Halyna, thank you so very much! These were just what I was looking for, and I will be trying them both! I did decide to try my hand at a pie before I got your recipes, and here is what I did. It turned out pretty well, and everyone liked the tartness.
TRAFFIC JAM PIE
1/4 cup dried cranberries
1/4 cup lite cranberry pomegranite juice
1 quart strawberries, hulled and corsely chopped
2 large stalks of rhubarb, sliced
2 Tbsp flour
3 Tbsp Splenda
1 (20 oz) can light cherry pie filling
pastry for one double crust deep-dish pie, unbaked
In a large bowl combine cranberries and lite cranberry pomegranite juice. Let sit 30 minutes.
Mix strawberries, rhubarb, flour and Splenda in a small bowl.
Combine cherry pie filling with cranberries and juice mxiture. Add flour and Splenda coated mixture. Mix well and pour into prepared deep dish pie crust. Top with additional pie crust. Cut slits to vent and crimp edges.
Bake at 350 degrees F for 45 minutes. Remove and cool on wire rack.
