I found this to be amazing. I used olive oil and this dish was SO amazing can't imagine how much better it would be with butter! Imagine one could use brown sugar replacement if one wanted, I did use diet Vernors ginger ale since that's all I had. Oh, and I had just bought new ginger for Thanksgiving, what a difference fresh spices make! DUH! Really, really, really yummy sauce. Enjoy!!!
GINGER PEAR CHICKEN WITH WALNUTS
2 chicken breasts, split, skinned and boned, i only used three chicken breasts but they were very large
3 tablespoons butter (I used olive oil)
1 (16 oz) can pear halves, drained and cut in half, juice reserved (I used lite pears in juice from concentrate - couldn't find any in their own juice at fry's)
3/4 cup ginger ale (I used Vernors diet)
1/4 cup brown sugar
3 tablespoons soy sauce
2 teaspoons cornstarch
1/4 cup water
1/4 teaspoon ground ginger
1/4 cup walnuts
Saute chicken breasts in butter for 10 minutes.
Add enough water to reserved pear juice to make 3/4 cup liquid total. Combine with ginger ale, brown sugar and soy sauce. Pour over chicken and cook, covered, on top of stove for 25 minutes.
Transfer chicken to 9 by 13-inch baking dish and add pears.
Mix cornstarch and water. Add, with ginger, to gravy in skillet. Cook for 15 minutes and then pour over chicken and pears. Top with walnuts.
Bake, uncovered, at 350 degrees F for 10 minutes.
Makes 4 servings
