Recipe: Chicken Cacciatore (using sun-dried tomatoes, mushrooms and white wine)
Main Dishes - Chicken, Poultry*This recipe looks amazing, but I've not personally made it because of the alcohol involved in cooking. I simply don't cook with alcohol and have yet to find what I can substitute the alcohol with while not compromising flavor.*
CHICKEN CACCIATORE
1 cup sun-dried tomatoes
5 pounds mixed chicken parts
1/2 cup olive oil, divided use
1/2 stick (1/4 cup) butter, divided use
1 1/3 cups chopped onion
3 cups mushroom caps, thinly sliced
4 cloves garlic
1 cup white wine
2 bay leaves
2 tsp. oregano
1 tsp. groudn black pepper
3 Tbsp. brandy
Salt to taste
Soak tomatoes in hot water and set aside.
Saute chicken in half olive oil, half butter, on all sides until golden. Set chicken aside.
Heat remaining oil and butter in skillet and saute onions until light golden. Add mushrooms and garlic. Continue sauteing until soft.
Place chicken parts in Dutch oven and pour onion-mushroom mixture on top of chicken. Pour in wine and add drained soaked tomatoes and remaining ingredients. Cover lightly and simmer 30 minutes or until chicken is thoroughly cooked through.
Makes 8 servings
