An even quicker, healthier, and more satisfying way to prepare bacon is on a cookie sheet in the top of an oven set to 425 F. You still must lift it to a paper towel to drain excess grease. (Be sure to pour the grease accumulated in the pan over your favorite dog's food. He'll worship you for it.)
Another suggestion, for a one-dish breakfast whether using the original or Union Grill recipe, a fried egg on top would be wonderful. And for the toast, you could substitute a patty of crispy hashbrowns or, as we so often do hear in the South, grits.
