This is such a yummy way to use up leftover turkey!
TURKEY POT PIE
2 pie crusts (top and bottom)
2 cups of chicken broth (or, 2 cups water, with 2 cubes chicken boullion)
3 stalks of celery, diced
1 small onion, diced
2 to 3 carrots, peeled and sliced
2 large potatoes, peeled and cubed
2 tbsp. parsley
1 tea either oregano, or basil
2 tbsp. butter
3 tbsp. flour
1/2 cup milk
about 2 cups of diced/shredded, however you prefer, cooked turkey (you can also use chicken)
Saute the onion and celery, until the onion is translucent.
Add the carrots and broth (or water and boullion). Bring to a boil, add the spices and the potatoes. Simmer, until the potatoes are finished cooking.
Melt the butter in the microwave, and add flour. Stir until smooth. Pour into a pan, along with the milk and turkey. You'll stir it until it is slightly thickened, then add it to the potato mixture (after the potatoes are finished cooking).
Put of the pie crusts in the pie plate, pour in the mixture, then top with the other crust. I usually brush the top crust with a bit of melted butter.
Cook at 350, for about 20 minutes, or until your top crust is browning. This is definately best if done in a deep dish pie plate.
