CHICKEN OR TURKEY AND NOODLES
Yield: 50 servings
Serving Size: 1 cup (8 ounce ladle)
2 gallons chicken stock
2 lb 8 oz noodles
1 1/2 tsp flaked marjoram (optional)
1/2 cup parsley flakes (optional)
2 1/4 cups fresh onions, chopped
2 cups carrots, shredded (optional)
1 1/2 quarts reconstituted nonfat dry milk
6 lb 6 oz cooked chicken or turkey, chopped
1 1/2 tsp black or white pepper
Heat chicken stock to boiling. Slowly stir in noodles, onions, and carrots(optional). Boil, uncovered, for 6 minutes. DO NOT DRAIN.
Melt butter or margarine. Add flour and stir until smooth.
Add flour mixture, milk, pepper, marjoram (optional), parsley flakes(optional), and chicken or turkey to noodles. Stir gently to combine.
Cook over medium heat, stirring occasionally until thickened, 6-8 minutes.
Pour into serving pans. Hold for 30 minutes on a 180-190F steamtable to allow sufficient time for mixture to set up properly.
