Recipe: Upside Down Brownie Puddiing

UPSIDEDOWN BROWNIE PUDDING

"A variation of chocolate pudding cake."

1 cup flour
3/4 cup white granulated sugar
2 tsp baking powder
1/4 cup plus 2 tbsp unsweetened cocoa powder, divided use
1/2 tsp salt
1/2 cup milk
2 tbsp melted shortening
1 tsp vanilla
3/4 cup chopped nuts
3/4 cup brown sugar
1 3/4 cups boiling water

Preheat oven to 350 degrees F. Grease an 8x8x2-inch baking pan.

Sift flour, white sugar, baking powder, 2 tbsp of the cocoa powder, and salt together into bowl. Add milk, shortening, and vanilla and mix well. Stir in nuts and pour into prepared pan.

Blend brown sugar and remaining 1/4 cup cocoa powder and sprinkle evenly over batter. Carefully pour boiling water over. Do not stir.

Bake at 350 degrees F for 40-45 minutes.
