FLAX SEED EGG REPLACEMENT
As a replacement for one egg:
In an electric blender, whirl 4 tsps. of whole flax seeds with 1/4 cup of water until mixture thickens to consistency of egg white OR simmer the mixture for 10 minutes if you have no blender. Use within 24 hours.
For replacing more than one egg, keep a 1:3 ratio of flax seeds to water;
for example: For 3 eggs, 1/4 cup of seeds to 3/4 cup of water.
Flax seeds can be found in any natural food store, and increasingly, in most supermarkets.
