"Sorry, I don't have specific recipes to give you. I can tell you, though, that I have had good results in using a tablespoon of powdered pectin mixed with 1/4 cup of water to replace an equal amount of oil in dressing recipes. I have replaced half the amount of oil with this mixture; have never gone 100% with the replacement. Giving the dressing a few hours standing time in the fridge improves the thickening power.
