Recipe: Salad dressings using pectin - Gingered Poppy Seed Dressing, Zesty Herb Dressing, Oil-free Salad Dressing
Salads - Salad DressingsThanks for acknowledging my effort. It's nice to know I was helpful. Your original question challenged me to find actual recipes. So it gave me an excuse to explore some software I got for Christmas, and I found three recipes that look pretty good. The first one should be good on my spinach/strawberry salad as soon as I can find some good berries. Hope you can use these.
GINGERED POPPY SEED DRESSING
Makes 1 3/4 cups
2 tbsp. powdered fruit pectin
1 tsp. poppy seeds
1/8 tsp. ground ginger
1 cup orange juice (probably fresh is best)
2 tbsp. honey
2 tbsp. lemon juice
Combine all ingredients; refrigerate several hours and stir well before serving over fruit salad.
ZESTY HERB DRESSING
Makes 1 cup
3/4 cup white grape juice or apple juice
1/4 cup white wine vinegar
7 tsp. powdered fruit pectin
1 tsp. Dijon mustard
2 garlic cloves, minced (or crushed for stronger flavor)
1 tsp. dried onion flakes
1/2 tsp. dried basil
1/2 tsp. dried oregano
1/4 tsp. coarse ground black pepper
In a small saucepan combine fruit juice, vinegar, pectin, mustard, and garlic. Bring to a boil; reduce heat to medium. Cook 5 minutes till slightly thickened, stirring occasionally. Stir in remaining ingredients; blend well. Store in refrigerator and serve cold.
OIL-FREE SALAD DRESSING
Makes 1/2 cup
1 tbsp. powdered fruit pectin
3/4 tsp. fresh or 1/4 tsp. dried, crushed herb of choice: (oregano, basil, thyme, savory, dill)
1/2 tsp. sugar
1/8 tsp. dry mustard
1/8 tsp. pepper
1/4 cup water
1 tbsp. vinegar
1 small clove garlic, minced
Combine all ingredients in a shaker. Store up to 3 days in refrigerator.
