This is the Valentine's Day Dinner I have planned for DH:

Eye Round Roast with Gravy
Spinach Souffle
Garlic Smashed Potatoes
Julienne of Carrots and Zucchini
trawberry Torte

The recipe for Eye Round Roast comes from Mrs. Alton Black, submitted in a little regional cookbook celebrating the bicentennial of the University of Georgia. It is called, "Jenkins County's Best". I havae been using this simple, but the best, roast recipe since 1984! I use it for special occasions and I know you will love it too!!

Eye Round Roast with Gravy

1 3 lb. eye of the round roast
1 can Campbell's Soup Golden Mushroom
1 pkg. Lipton Onion Soup Mix

Place roast on heavy aluminum foil. Empty mushroom soup over roast, sprinkle the onion soup over this. Seal the foil securely and bake 350 for 3 hours. When you open the foil, the gravy is done and the meat has the best flavor!!

Spinach Souffle

Oven at 350 for 30 mts.

1 10 oz. pkg. frozen chopped spinach
1 T. grated onion
2 eggs, beaten
1/2 c. sour cream
1 c. Parmesan cheese
1 T. flour
2 T. butter
dash of nutmeg
salt and pepper to taste

Cook spinach with onion in small amount of water until thawed. Drain. Add the remaining ingredients to the cooked spinach. Pour into a 1-quart greased casserole and bake at 350 for 30 mts. or until center is set.
Julienned Carrots and Zucchini

2 carrots, washed and julliened
2 zucchinis, washed peeled and julliened
2 tblsp. butter
1/4 cup sugar
1/2 cup water

Melt the butter in the water and dissolve the sugar in it. Add the jullienned veggies and heat to medium until tender.Strawberry Torte

1 angel food cake, torn into pieces
1 can condensed milk
1 8 oz. cream cheese, softened
1 large container cool whip
1 can strawberry pie filling

Put 1/2 of the pices of cake in the bottom of a glass trifle bowl. Mix the cream cheese with the condensed milk til well blended and smooth. Fold in the cool whip and blend well.

Pour half of this mixture over the cake pieces, top with strawberries, the remaining pieces of cake and on top of this the remaining of the cream cheese mixture. Refrigerate til ready to serve.
