Vegetable Medley (like Applebees)

At one time this recipe was listed on www.topsecretrecipes.com but no longer. (This is not steamed but sauted).

1/2 lb. Zuchinni - fresh, cut into 1/4 in. bias half moons
1/2 lb. Yellow squash - 1/4 in. bias half moons
1/4 lb. Red Pepper - fresh, 1/4 in. Julienne cut strips
1/4 lb. Carrots - fresh, 4 in by 1/4 in sticks.
1/4 lb. Red Onions - fresh, 1/4 in Julienne cut strips.
1 Corn on the cob, fresh - cut in 1" wheel cuts
3 TBLS butter or margerine
1 tsp. salt
1 tsp. granulated sugar 1 clove garlic minced
(The recipe lists 1/2 tsp. Granulated garlic and I've substituted the above).
1 tsp. Worchestershire sauce
1 tsp. Soy Sauce
2 tsp. Parsley, fresh or dried.

Thoroughly clean & sanitize sink. Rinse & wash all veggies under cold water. Clean & sanitize cutting board and knife. Cut ends off both squash, then down center lengthwise. Using chef knife, cut into 1/4 in bias half moons. Slice red pepper in half and remove stem. Core & remove seeds from the red peppers. Cut each half in half, then slice lengthwise. Slice both ends of onion off. Remove the peel and core of the onion. Slice lengthwise for a 1/4 in Julienne cut. Peel carrots. Trim top end of each carrot & narrow bottom end to result in a 4 in. length of (somewhat) uniform width. Cut each piece in half lengthwise, then cut the halves into quarters, results should be app. 1/4 in by 1/4 in sticks. Heat butter or margerine in saute pan over med. heat. (Do not scorch). Add salt, sugar and garlic. Add veggies, (start w/carrots and work back up the list - denser take longer to heat) and cook until hot, yet crisp. When veggies are all in pan and cooking, add Worchestershire sauce, soy sauce and parsley. Mix thoroughly and serve.
