Here is a recipe that was given to me about 20 years ago by a sweet old lady who used to bake these and bring them in to me at work... They are the most delicious blueberry muffins I have ever eaten. Hope you enjoy...
MIXTURE HAS TO BE DRY :
1 cup flour
2 teaspoons baking powder
1 cup sugar
1/2 teaspoon salt
2 Tablespoons melted butter
1 egg
1/4 cup milk (this is the correction)
1 Tablespoon lemon juice
1 carton blueberries
Mixture to be sprinkled on bottom and top:
1/2 cup sugar
1/3 cup flour
1 Tablespoon cinnamon
1 Tablespoon softened butter
Bake at 375 degrees F for 30 minutes. Makes 1 dozen.
That's exactly how she gave me the recipe....now I'll let you in on how to put it together..lol..
Muffin mixture is to be blended in order of ingredients. Gently stir in blueberries.
Topping (and bottom) also to be combined in order of ingredients...cutting in the butter. Put small amount of topping in each muffin "cup"...fill 2/3 full with muffin mixture..and sprinkle "topping" on top of each muffin. Bake as directed. Avoid the temptation to add more liquid to the muffin mixture as it will create an unbelievably moist muffin..trust me on this!!
