Recipe: Vinegar Link

I made my first vinegar accidently while making wine. Got my "mother" (acetobacillus) for free and have kept her happy o'er the years. The trick is to get a good mother. You can leave your wine out in the open for a while and hope an natural acetobacillus happens to wander over or order a culture from http://www.leeners.com/vinegarmaking.html .

The mother is to vinegar making as yeast is to fermentation.

Once you get your mother going , get a crock, fill it with wine, inoculate it. cover w/ several layers of cheesecloth . Mother needs lots of oxygen so don't seal her off.
