Recipe: Warm Dark Chocolate Fudge Sauce (from Death By Chocolate Cakes)

WARM DARK CHOCOLATE FUDGE SAUCE

1 1/2 cups heavy (whipping) cream
1 1/3 cups granulated sugar
5 oz unsweetened baking chocolate; coarsely chopped
2 oz (1/2 stick) unsalted butter, cut into 1/2 oz pieces

Heat heavy cream, sugar and chocolate in a saucepan over medium heat, stirring to dissolve sugar and melt chocolate. After mixture comes to a boil, adjust heat to medium-low and simmer for 20 minutes, stirring frequently, until thickened and very smooth.

Remove saucepan from heat. Add butter, one 1/2-oz piece at a time, stirring to incorporate before adding more.

Keep warm in a double boiler until needed or cool to room temperature and refrigerate in a sealed plastic container.

Makes 2 3/4 cups
