Recipe: Warm Pasta and Spinach Salad with Hot Bacon Dressing (Hellmann's and Mueller's recipe)
Salads - Potato, PastaWARM PASTA AND SPINACH SALAD
1 (7 oz) pkg Mueller's Pasta Swirls/Spirals
1 (10 oz) pkg fresh spinach, washed, stems removed and torn into bite-size pieces
1/2 lb mushrooms, sliced
1 medium red onion, sliced
6 slices uncooked bacon, coarsely chopped
FOR THE HOT BACON DRESSING:
1 tbsp cornstarch
1 tbsp sugar
1 tsp salt
1/2 tsp pepper
1 cup Hellmann's or Best Foods Real Mayonnaise
1 cup water
1/3 cup cider vinegar
Cook the pasta according to package directions. Rinse with cold water and drain.
In large serving bowl, toss spinach, mushrooms, pasta and red onion; set aside.
In medium skillet, cook bacon over medium-high heat until crisp. Remove with slotted spoon. Pour off all but 2 tablespoons drippings from the skillet.
In small bowl, mix cornstarch, sugar, salt and pepper. With wire whisk, stir cornstarch mixture into drippings in skillet until smooth. Stir in mayonnaise until blended. Gradually stir in water and vinegar. Over medium heat, bring mixture to a boil; stir constantly. Boil 1 minute.
TO SERVE:
Pour dressing over spinach mixture. Add bacon; toss to coat well. Serve immediately.
