A friend of mine gave me this recipe.
WHATEVER MUFFINS
1 1/4 cup flour
1 1/4 cup oats
1/2 teaspoon bakling soda
1/4 teaspoon salt
1/2 cup brown sugar
1/4 cup canola oil
2 teaspoons vanilla
fat free or 1% milk (as needed)
Optional additions*
Preheat oven to 350 degrees F. Coat muffin pan cups with cooking spray or insert paper liners.
Combine flour, oats, baking soda, and salt.
Mix together brown sugar, oil, and vanilla. Stir into flour mixture. Gradually stir in milk as needed to make muffin batter consistency. Stir in optional additions. Place batter in prepared cups.
Bake at 350 for 30 minutes.
*ADDITIONS:
You can add chopped apple, blueberries, raisins, shredded carrots, nuts, dried dates. or whatever.
