Recipe(tried): White Chocolate Ganache for Truffles

You can add just about any flavor you can think of to this ganache. I like using Frangelico and adding finely chopped roasted hazelnuts to the ganache.

WHITE CHOCOLATE GANACHE FOR TRUFFLES

1/2 cup cream
8 ounces white chocolate, chopped
1 tablespoon butter
1 tablespoon light corn syrup
Options for flavors:
- 2 Tablespoons Cognac, rum, Grand Marnier, framboise, Frangelico, or other liquor or liqueur
- 1 cup peanut butter
- 1/4 cup fruit spread - like jam made without added sugars. If using raspberry or other seeded varities you will need a seedless jam or fruit spread.

Combine cream, butter, and corn syrup in a pan and bring to boil over low heat. Immediately remove from heat and allow to cool 5 minutes.

Add cream mixture to chocolate and whisk smooth. Whisk in cognac, rum or other flavor.

Refrigerate at least one hour or until you are able to scoop into small balls for coating in tempered chocolate.
