WHITE TURKEY CHILI
1 tablespoon olive oil
11/2 cups coarsely chopped onions
2 cloves garlic, minced
1 (4 ounce) can chopped mild green chilies
1 jalapeno pepper, minced
1 teaspoon ground cumin
1/2 teaspoon dried oregano leaves
1/4 teaspoon cayenne pepper
1/4 teaspoon salt
2 cups cooked turkey, cut into 1/2-inch pieces
1 (19 ounce) can white kidney beans (cannellini), rinsed and drained
1 cup 1/3-less-salt chicken broth
1/4 cup coarsely chopped fresh cilantro
1/2 cup (2 ounces) shredded reduced fat Monterey Jack cheese
Heat oil in 3-quart saucepan over medium-high heat. Add onions and garlic. Cook 5 minutes or until onion is tender.
Stir in chilies, jalapeno pepper, cumin, oregano, cayenne pepper and salt; cook 1 minute.
Stir in turkey, beans and chicken broth. Bring to a boil; reduce heat. Simmer, uncovered, 20 to 25 minutes or until slightly thickened. Stir in cilantro.
To serve, ladle into bowls and top each with 2 tablespoons cheese.
