My sister in Baltimore went to a company catered luncheon yesterday and raved about a wild rice salad. She gave me the list of ingredients that I'll post. Quantities are a guess, not having made it before, but it does sound good.
WILD RICE SALAD
Cooked wild rice (about 3 or 4 cups cooked)
Green, red and yellow peppers, minced fine
A bunch of green onions, diced fine, using lots of the green tops
Dried cherries, plumped with warm water before using, then cut in half (I'd think about a 1/2 cup or more?)
Dried apricots, plumped with warm water before using, then sliced lengthwise into 1/8-inch slices, again 1/2 cup or more
This is all mixed with a very light mild vinagrette - probably oil, rice wine vinegar, some sugar, salt and pepper to taste. No herbs were used at all.
Sorry about the quantities - I think it would be to everyone's taste how much of each item were used.
I hope to try this over Easter week. If anyone has the actual recipe with quantities for this salad, maybe they could post it.
