YAM CHIPS
1 pound yams or sweet potatoes (3 small or 2 medium)
1 1/2 tablespoons olive oil
2 teaspoons herb blend of choice
1/2 teaspoon salt (plus more, to taste, after baking)
Heat the oven to 425 degrees F. Line a cookie sheet with foil and coat the foil with cooking spray.
Cut the yams into thin slices, about 1/8-inch thick.
Put the slices into a large sealable plastic bag. Add the oil, the herb blend, and the salt. Seal the bag and shake to coat. Place the yam slices in a single layer on the prepared cookie sheet.
Bake for 25 minutes or until the chips are golden brown, flipping once during cooking time.
Servings: 4
