MASHED POTATOES WITH SCALLIONS AND CHEDDAR
4 russet baking potatoes
1 cup milk, scalded
1/2 cup shredded sharp cheddar cheese
3 tablespoon unsalted butter, cut into bits
1 cup chopped scallions (about 1 bunch)
Salt and pepper, to taste
Peel the potatoes and cut them into 1/2-inch pieces into a bowl of cold water; drain.
In a vegetable steamer set over boiling water steam them, covered, for 12 to 15 minutes, or until they are very tender.
Rice the potatoes or puree them through a food mill into a large saucepan, adding some of the milk if necessary to facilitate ricing them.
Stir in the milk and cheese. Heat over low heat, stirring, until the cheese is melted. Beat in the butter. Stir in scallions and salt and pepper to taste.
Makes 6 servings
