Recipe: Yum Yum Candy (rolled potato candy)

Hi Karen, Elly's recipe sounds good and I thought the same thing about rolling in cinnamon when I ran across this recipe.

YUM YUM CANDY from The Nashville Cookbook

1/2 cup cold mashed Irish potatoes, 1 box (16 oz.) powdered sugar, 1 cup smooth peanut butter. Place cold mashed potatoes in large mixing bowl. Add XXX sugar one cup at a time. Mix all until it resembles pie pastry. Roll lightly on a piece of waxed paper dusted with extra sugar into oblong shape to about 1/4 inch thickness. Spread with soft peanut butter, covering entire dough. Roll from long side, as jelly roll. Chill then slice and serve. I know this doen't sound like what you described but I thought you might want it. I've seen other recipes in my books and will continue to look.
