Request: Irish Potato Candy
Misc. As St. Patrick's Day approaches, I find myself longing for the taste of these marvelous little candies, made with mashed potatoes, confectioner's sugar, and cinnamon. They are white on the inside, brown on the outside and are meant to look like potatoes, to remind people of the infamous famine. I believe there are also recipes out there that do not use mashed potatoes, and these are tasty too, though not quite so divine. Do you have either recipe? Could you post it here? My Irish Catholic mother-in-law and I will be eternally grateful.
