BAKED ZITI WITH THREE CHEESES AND ONION
Serves 6 to 8
1 lb ziti
2 cups chopped onion
1 tb or to taste olive oil
ground black pepper
1/2 cup Parmesan cheese
1/2 cup Pecorino cheese
1 1/2 cups (1lb) low fat Ricotta Cheese
2 cups basic Spagetti Sauce (whatever brand available)
Cook the pasta and drain. Combine the pasta, uncooked onions, oil, ground pepper and toss well. Transfer 1/2 the pasta mixture to an already oiled baking dish (9x13x2). Sprinkle half the Pecorino and Parmesan over. Spoon half of the Ricotta over. Spoon 1 cup of the Tomato sauce over. Repeat a second layer of all. Cover with foil. Bake in preheated 350 F oven for 30 minutes. Remove foil and bake 10 minutes longer.
Serve with green salad from the supermarket and garlic bread. A red Rioja might be nice to accompany the meal.
