Gail's Zucchini Bread
3 eggs
2 cups sugar
1 cup canola oil
2 cups grated zucchini
1 teaspoon vanilla
3 cups flour
1/2 teaspoon each salt, baking soda, cinnamon
1/4 teaspoon baking powder
1/2 cup chopped nuts
Beat eggs until light and foamy. Add sugar, oil, zucchini and vanilla; mix lightly but well. Combine dry ingredients and add to egg-zucchini mixture. Stir until well blended. Add nuts and pour into two greased loaf pans. Bake at 325 for 1 hour 20 minutes.
This recipe from my friend Gail is the best way to use up end-of-the-season zukes from the garden patch. Our family loves it.
