Hello Jennifer, Here's a recipe for you from our archives. It doesn't have chicken in it, but it would be a good addition. I would layer in about 1 cup cooked chicken, diced with the zucchini mixture. Maybe someone will have another recipe to share. - Betsy
ZUCCHINI CARROT CASSEROLE
From: sara, ga - 12-30-97
2 lb. zucchini, sliced
1/4 onion, chopped
1 (10 3/4 oz.) can condensed cream of chicken soup
1 cup sour cream
1 cup shredded carrot
1 (8 oz.) pkg. Stove Top seasoned stuffing mix
1/2 cup butter, melted
Cook onion and zucchini in boiling water 3 minutes; drain. Add (undiluted) soup and sour cream; stir. Add carrots and salt and pepper to taste; stir.
Mix (dry) stuffing mix with melted butter. Spread 1/2 of stuffing on bottom of baking dish. Spread zucchini mixture over stuffing. Then top with remaining stuffing.
Bake at 350 degrees F for 25 to 30 minutes.
