Zucchini Patties

3 1/2 cups grated zucchini
3 tablespoons grated onion
2 tablespoons minced parsley
1/3 cup grated parmesan cheese
1 cuo soft bread crumbs
1/2 teaspoon pepper
1 teaspoon salt
2 eggs, well beaten
fine bread crumbs
1/4 cup melted butter

Grate and drain zucchini. Wrap in paper towels to remove excess moisture.

Combine zucchini, onion, parsley, cheese and soft bread crumbs with salt, pepper and eggs. Shape into patties and dip in fine bread crumbs.

Melt butter in large skillet; dip patties in butter turning to coat both sides. Fry until tender and crispy.

Can be dipped in melted butter and baked on a baking sheet at 350 degrees for 30-40 minutes.
