Fried Zucchini

Cut zucchini lengthwise into slices about 1/2" thick. Make a mixture of breadcrumbs with garlic, oregano, basil, rosemary, thyme, and any other appropriate Italian spices you have handy. Dredge the zucchini in the breadcrumbs, then in a beaten egg, then back to the breadcrumbs. Coat well. Fry in olive oil until browned. Great with marinara sauce. Terrible cold, eat right away.
