Baked Stuffed Zucchini

Cut zucchini in half length-wise. Score the meat and spoon onto a cutting board, leaving a shell. Dice the meat and add 2 tbsp of grated sharp cheddar cheese per zucchini. Mix well. Spoon the mixture back into the zucchini halves. Bake at 325F for 25-30 minutes.

I saw a variation of the mixture recipe including cumin, garlic, onions and other spices.
