Recipe(tried): Zucchini Relish

ZUCCHINI RELISH

Zucchini Relish is the bomb for Tuna Salad on crackers. Also good with hot dogs. My mother used to make it when I was growing up. She has passed away and now I make it. My own 3 grown daughters steel jars from me so that they can make the tuna salad in the winter with this yummy relish. Great way to use up the "carload" of zuchs.

10 cups grated zucchini
4 large onions grated
5 Tbsp salt
Mix and let stand overnight.

Rinse with cold water and squeeze out excess water, then add:
5 1/4 cups cider vinegar
5 cups sugar
1 each finely chopped green and red bell pepper
1 small bottle chopped pimiento (I've left this out on the fly and it's still great)
1 tsp dry mustard
1 tsp nutmeg
1 tsp turmeric
1/2 tsp white pepper
2 tsp celery seed
1 tsp corn starch

Cook 30 minutes stirring constantly. Ladle into hot sterile jars (pints or jelly), wipe rims and place lids/rings on tight. Process 10 minutes in boiling water bath.
