Recipe: Zucchini Soup with Italian Sausage

ZUCCHINI SOUP WITH ITALIAN SAUSAGE

1 lb. Italian sweet or hot sausage, remove casing
2 cups celery in 1/2 inch pieces
2 quart tomatoes
2 lbs. zucchini, cut into 1/2 inch pieces
1 cup chopped onion
2 tsp. salt
1 tsp. Italian seasoning
1 tsp. oregano
1 tsp. sugar
1/2 tsp. basil
1/4 tsp. garlic powder
2 green bell peppers, cut into 1/2 inch pieces
mozzarella or Parmesan Cheese (optional)

Brown sausage, drain off fat.

Add celery and cook 10 minutes.

Add remaining ingredients except green pepper. Simmer, covered, 20 minutes.

Add green pepper and cook, covered, 10 minutes.

You can add mozzarella or Parmesan Cheese at serving time or during the last 10 minutes of cooking.

Makes 3 1/2 quarts
