Recipe(tried): Microwave Bread and Butter Pickles

MICROWAVE BREAD AND BUTTER PICKLES

2 1/2 cups thinly sliced cucumbers
3/4 cup thinly sliced onions
you may add a small amount of chopped green bell pepper (but this is optional)
1 cup sugar
1/2 cup white vinegar
1 teaspoon salt
1/2 teaspoon mustard seeds
1/4 teaspoon celery seeds
1/4 teaspoon tumeric

Place cucumber, onion, and green pepper (if using) in a microwave safe bowl, bowl may be stained by the tumeric you use.

Whisk together sugar, vingegar, salt, mustard seeds, celery seeds, and tumeric in a measuring cup. Pour over the pickles and onions.

Microwave for 6-8 minutes, stirring every two minutes. Store in refrigerator.

I have made several small batches and have a two quart pickle jar I fill each summer. It may last a couple months. Ready to eat the next day.
