ISO: diners/cafes along I-80 or I-76 - Anyone from Iowa, Nebraska or Colorado?

Can anyone recommend any diners/cafes along I-80 or I-76? We are taking a roadtrip and would love to sample some real food along the way. Good way to meet our fellow Americans also. We try to avoid the fast-food as much as possible. We have time restraints so we have to keep pretty close to the highway. but 5 or so miles off is ok. Thanks so much everyone.
