ISO: dinners on a hot day

Misc.
what do you serve for dinner when the weather is very hot? My imagination goes
out the window with the heat but I still like to cook (and eat) something good.
Also, after a few days of grilling, barbecued foods start to loose their appeal.
Any suggestions or recipes that are fast and delicious will be greatly appreciated. Many thanks, Eliana
