Recipe(tried): Salmon Croquettes and Macaroni Salad

One of my favorite meals for a hot summer night is Salmon Croquettes and Macaroni Salad

SALMON CROQUETTES

1 can of Salmon - bones removed
1 egg
salt/pepper to taste
Parsley flakes
cornflake crumbs

To a can of salmon (use the more expensive salmon its worth it!) add a beaten egg, salt and pepper, a couple of shakes of parsley flakes, and cornflake crumbs. Add enough crumbs so the salmon holds its shape. Pat into "logs".
Cook in a couple of tablespoons of oil until heated through.

MACARONI SALAD

Cooked elbow macaroni
chopped bell pepper
chopped green onions
hard boiled eggs chopped
celery salt
salt/pepper to taste
mayonnaise
mustard

I don't really have a recipe for the macaroni salad. Just combine the above ingredients to your liking. Sounds simple but it is delicious. The mayo and mustard should be mixed together to form the dressing. I like mine pretty
yellow because I like a fairly strong flavor!
